Cooking spelt

BEFORE COOKING:
Before cooking, you may rinse the spelt, although it is not necessary.
COOKING:
Add the spelt to boiling water using a ratio of 1 cup spelt to 2 cups water. Stir until the water returns to a boil. Simmer for 20–30 minutes on low heat. Start timing from the moment the water boils again. Do not stir while cooking! Lightly salt the water (half a level teaspoon should suffice) and add oil (1 tablespoon per 100 g of spelt). Cook covered with the lid slightly ajar. The spelt is ready when the grains have absorbed all the water.
AFTER COOKING:
After cooking, drain any excess water and add butter or vegetable oil. Let it sit for 15 minutes.
SERVING SUGGESTION:
Spelt can be served on its own or added to pancake batter or other dishes. It can also be used in the preparation of cold desserts.
