Cooking Dried Mushrooms

BEFORE COOKING:

Soak dried mushrooms in cold water for 3–4 hours before cooking, then dry them.

COOKING:

Place the dried mushrooms in cold water ensuring there is enough water to fully cover them. It is best to cook them in the same water used for soaking. Cook dried mushrooms for 1–1.5 hours. Time starts when the water reaches boiling point. If you are certain about the type of mushrooms, there is no need to change the water during cooking. In case of any doubt, change the water 1–2 times during cooking, though it is better not to consume such mushrooms! Skim off the foam during cooking. Salt the water towards the end of cooking. Season to taste with pepper, ginger, allspice, nutmeg, marjoram, and bay leaf. Cook with the lid on. The cooked mushrooms will be soft and delicate.

AFTER COOKING:

After cooking, drain and dry the mushrooms.

SERVING SUGGESTION:

Dried mushrooms can be enjoyed as a delicacy or as an accompaniment to other dishes (groats, rice, or vegetables). They also make an excellent main ingredient for mushroom soup, marinade, or sauce.
