Cooking Leccinum Gray

BEFORE COOKING:

Peel the caps of fresh leccinum gray mushrooms, wash and dry them.

COOKING:

Place the mushrooms in cold water, ensuring they are completely covered. Cook the mushrooms for 20 minutes. Begin timing once the water reaches a boil. If there is any doubt about the type of mushrooms, change the water once or twice during cooking or refrain from consuming them! If you are certain of their type, changing the water during cooking is not necessary. Skim off any foam during cooking. Salt the water towards the end of cooking. Season to taste with pepper, ginger, allspice, nutmeg, marjoram, and bay leaf. Cook with the lid on. The cooked mushrooms will be soft and delicate.

AFTER COOKING:

After cooking, drain and dry the mushrooms.

SERVING SUGGESTION:

The mushrooms can be served as a delicacy or as an accompaniment to other dishes (such as cereals, rice, or vegetables). They can also serve as an excellent main ingredient in a mushroom soup, marinade, or sauce.
