BEFORE COOKING:

Peel the caps of fresh slippery jack mushrooms, wash and dry them.

COOKING:

Place the slippery jack mushrooms in cold water, ensuring there is enough water to completely cover them. Fresh slippery jack mushrooms should be cooked for 30–35 minutes. Time starts from when the water reaches a boil. If there is any doubt about the type of mushrooms, change the water during cooking (1–2 times) or refrain from consuming them! If there is no doubt, changing the water during cooking is not necessary. Skim off the foam during cooking. Salt the water towards the end of cooking. Season with pepper, ginger, allspice, nutmeg, marjoram, and bay leaf if desired. Cook with the lid on. The cooked mushrooms will be soft and tender.

AFTER COOKING:

After cooking, drain and dry the slippery jack mushrooms.

SERVING SUGGESTION:

Slippery jack mushrooms can be enjoyed as a delicacy or as an addition to other dishes (groats, rice, or vegetables). They can also serve as an excellent main ingredient in a mushroom soup, marinade, or sauce.
