Cooking Shiitake Mushrooms

BEFORE COOKING:
Clean, wash, and dry fresh shiitake mushrooms before cooking.
COOKING:
Place the shiitake mushrooms in cold water, ensuring they are completely submerged. Cook the shiitake mushrooms for 3–4 minutes. Begin timing from when the water starts boiling. If the mushroom variety is certain, changing the water during cooking is unnecessary. In case of any doubt, change the water once or twice during cooking—or better yet, avoid consuming such mushrooms! Skim off any foam during cooking. Towards the end, salt the water and season with pepper, ginger, allspice, nutmeg, marjoram, and bay leaf to taste. Cook covered. The mushrooms will become soft and tender.
AFTER COOKING:
Drain and dry the shiitake mushrooms after cooking.
SERVING SUGGESTION:
Shiitake mushrooms can be enjoyed as a delicacy or as an addition to other dishes (grains, rice, or vegetables). They also work excellently as the main ingredient in a mushroom soup, marinade, or sauce.
